We got the call to head to the Le Cordon Bleu Cooking School at the National Kaohsiung University of Hospitality and Tourism to sharpen up the house kitchen knives. Knowing that culinary students often don't have the greatest quality gear as they start their journey, we were pleasantly surprised to see that Le Cordon Bleu actually had Wusthof knives at the students' disposal. We received a mix of paring knives, boning knives, chef knives, and fillet knives, and a few personal knives of students and instructors. All the knives were definitely dull and well used. However they were were also very well cared for and maintained. Aside from the usual scratches and dings, there were only age related issues, such as the bolster being exposed, which is the topic of this video.
The simple fix is to grind down the bolster past the bevel, clean it up and sharpen, taking care to thin out the thicker transition area that is exposed from the removed bolster material.
