Masala paratha ingredients:
For flatbread dough:
Wheat flour - 2 cup
Water - 3/4 cup
Salt - 1/2 TSP
For stuffing:
Gram flour - 2 cup
Ginger chilli paste - 2 tbsp
Coriander seed powder - 2 tbsp
Fennel seed powder - 6 tbsp
Red chilli powder - 2 tbsp
Sugar - 3 tbsp
Ajman seeds - 1/4 TSP
Asafoetida - 1 tbsp
Coriander leaves (very finely chopped) - 4 cup
Salt - to taste (2 TSP)
Cooking oil (any) - 1/2 cup
Masala paratha method:
Add the wheat flour, salt and water in a mixing bowl and kneed the dough till it's semi soft.
For stuffing:
In a pan - add 1/2 cup cooking oil, once hot add all the stuffing ingredients and mix well. Once the mixture is uniform turn off the flame - if the mixture is very dry sprinkle up to 3 to 4 tbsp of water. Allow the stuffing to cool down.
Take dough and divide into 8 parts and roll each part into a ball.
Now make 8 balls of stuffing which are slightly smaller than the dough balls.
For each paratha - roll the dough balls into flat circle. Place the stuffing ball in the center. Fold the flattened dough to cover the stuffing ball. Roll into a flat circle again. Place in a pan and cook both sides till the paratha is well cooked.
