Korean Braised Oxtail
Step 1: Preparing the Oxtail
Soak the oxtail in cold water for at least 3 hours, changing the water a few times. This step is crucial!
Step 2: Blanching the Oxtail
Place the oxtail in a pot, cover with water, and boil to remove impurities.
Drain and rinse each piece under cold water.
Step 3: Simmering the Oxtail
Simmer the oxtail for about 2 hours, ensuring it’s covered with water.
Add 4 bay leaves, green onion roots, 10 garlic cloves, whole peppercorns, and 1 teaspoon of salt to enhance flavor.
Keep it submerged, adding water as needed.
Step 4: Making the Chive Salad
Slice chives into bite-sized pieces, adding hot peppers if desired.
For the dressing, mix equal parts soy sauce, plum extract, sesame oil, vinegar, and chili powder, plus 1.5 parts oxtail broth and 0.5 parts sugar. Taste and adjust acidity with more vinegar as needed.
Toss chives with the dressing gradually for balance.
Step 5: Time to Eat
Enjoy the tender meat with the tangy chive salad—it’s a perfect combo!
Share this dish with friends or family for a delightful meal.
Bonus Dish: Noodles
Cook somyeon noodles and mix with leftover chive salad and dressing for a refreshing palate cleanser.
