Ingredients for Murukku
Rice flour - 2 cups
Gram flour - 1cup
Fried gram – 1 cup
Red chilli powder – 1 .5 tsp
Oil or butter – 4 tbsp
Cumin seeds – 1 tbsp
Carom seeds ( Ajwain) – 1 tbsp
Sesame seeds – 2 tbsp
Salt - 1½ tsp (to taste)
Oil - for frying
How to make butter murukku
For the dough
1- Take 1 cup of fried gram and add it to mixer jar.Make it a fine powder.
2- Take a vessel add rice flour, gram flour and fried gram powder.
3- Then add spices red Chilli powder,cumin seeds,carom seeds,sesame seeds, salt, Mix well
4- Mean time warm the oil or butter and add to the mixture(do not mix immediately you may burn your hands)
5- Slowly add the flour on to the oil and mix uniformly.
6- Mix without lumps and a crumble texture has to come
7- Take small portion of mixture to it add 3 tbsp of water in portions and knead it like Chapathi dough.
8- Form into cylindrical shape
9- Then take star mould and grease the chakli press with oil.
10- .fill the dough into the chakli press and then fix it.
11- . RIghtly heated oil and the medium flame is required to fry these Murukkus.
12- Add them while spreading according to the capacity of a wok.
13- Flip them once the foam reduces and fry until they are golden brown.
14- Murrukus appears golden brown, they have fried.
15- Drain them out using a ladle and stop the ladle on the corner of wok so that extra oil moves back in it.
16- Fry all Murukkus in the same way
17- It takes 3-4 minutes to fry a single round of butter Murukkus.
Serving: 1- Store them in an airtight container once they cool down and eat them for 2 months.
