Australia's love affair with online food delivery is reshaping the restaurant market.

Consumers are hooked on the convenience of meals ordered on their smartphone.

But apps such as Uber Eats and Menulog take a punishing cut from the thin profit margins of restaurants.

Now, some restaurateurs are fighting back, building remote facilities called 'dark kitchens' and harnessing the data that comes with them.
