Consumers are hooked on the convenience of meals ordered on their smartphone.
But apps such as Uber Eats and Menulog take a punishing cut from the thin profit margins of restaurants.
Now, some restaurateurs are fighting back, building remote facilities called 'dark kitchens' and harnessing the data that comes with them.
