The Bombay Sandwich is an iconic street food found in the secret inner side roads in downtown Bombay. What makes this sando so special is the secret blend of spices that is sprinkled over each layer. Many have tried to guess but I just asked nicely! lol So here it is, the Original Masala recipe (according to the man I got it from).
THE BOMBAY SANDWICH
This indulgent delight features a double layer of toasted bread, oozing with melted cheese and lashings of melted butter and vibrant fresh green chutney elevate this sando to another level. Key to the success of this delight is a special spice masala, creating a taste sensation that is truly unforgettable.
INGREDIENTS:
3 slices of white bread
1 medium sized potato, boiled and sliced (5mm slices)
1 medium tomato, sliced thinly
2” cucumber, sliced thinly
¼ of an onion, Ssiced thinly
cheddar cheese, grated
butter to cook
Bombay Sandwich Spice Masala:
Grind all the spices together using a spice grinder or pestle and mortar.
7-8 Cloves
½ tsp cumin seeds
½ tsp fennel seeds
½ tsp black pepper corns
¼ tsp cinnamon/cassia bark
½ tsp salt
¼ tsp amchoor/mango powder
¼ tsp garlic powder
You would usually have ‘1/4 tsp of Black Salt / Kala Mirch added to this but it’s a very acquired taste and has an aroma Im not big on! Give it a try and tell me what you think in the comments.
Green Chutney:
Blend all the ingredients together in a mini chopper
½ cup fresh coriander/cilantro
¼ cup fresh mint leaves
1 green chilli (more if you like it hot)
1cm knob of ginger
¼ tsp salt
¼ tsp sugar
5 tbsp fresh lemon juice
METHOD:
FIRST LAYER:
BREAD, BUTTER, CHUTNEY, SLICED POTATO, SPRINKLE OF SPICE MASALA, SLICED ONION, GRATED CHEDDAR
TOP WITH A SLICE OF BREAD, BUTTERED AND CHUTNEY BOTH SIDES
SECOND LAYER:
SLICED TOMATO, CLICED CUCUMBER, SPRINKLE OF SPICE MASALA, GRATED CHEDDAR
TOP WITH A SLICE OF BREAD, BUTTER AND CHUTNEY FACE DOWN
• If you have a panini grill, slide the sandwich in there, remembering to butter the outer sides of the bread touching the heated plates.
• Heat up a frying or griddle pan
• Add a knob of butter and let it melt before placing the sandwich down
• Apply gentle but firm pressure on the top of the sandwich with a spatula
• When ready to turn, butter the top slice and flip over carefully.
The butter on both sides is important to give you that indulgent, shiny, crisp outer crust to this #EPIC #bombaysandwich
