This is an old family dish that we enjoyed in the summer months when the garden was supplying lots of fresh cucumbers. Very easy to put together and you can make it a little ahead of time.
Creamy Cucumber Salad
3 medium cucumbers - seeded (optional) and sliced thinly
1 cup sour cream
1/2 tsp salt
1/4 tsp pepper
1 TBSP apple cider vinegar (more or less to taste)
1 TBSP sugar (more or less to taste)
3 green onions/scallions (green part only), chopped
In a large bowl, combine sour cream, salt, pepper, vinegar and sugar. Mix well and taste. Adjust seasoning to taste - add a bit more vinegar or sugar if you prefer it a little more tangy or sweet.
If the cucumbers have large seeds, you can slice cuke lengthwise and scoop out the seed with a spoon. Some varieties have very small and tender seeds, so you could leave those as-is if you like.
Slice cucumbers thinly. I use a mandoline for this task, but you can also just use a sharp kitchen knife.
Chop the green parts of three green onions. Add the sliced cukes and chopped green onions to the sour cream mixture and gently toss to make sure everything is coated and combined. Cover bowl with plastic wrap and refrigerate for an hour.
Serve cold. If you like, garnish with fresh dill, chopped chives or more green onion.
