Khoya Kheer is a rich and creamy Indian dessert made primarily from khoya (also known as mawa) and rice, simmered with milk and flavored with spices like cardamom. It is a variation of the traditional kheer, which is a sweet rice pudding enjoyed across India and the Indian subcontinent.
I have used LOW GI RICE & DIABETIC SWEETENER (wth Monk Fruit & Stevia ) from @diabesmartindia to make this kheer Diabetic friendly. Low GI rice has only 50 GI, it's clinically tested and tastes like regular rice and Diabetic Sweetener has Monk fruit and Stevia as the primary ingredient, giving you the perfect sweetness but no after taste.

👉Ingredients:
Rice - 1/2 cup
Ghee - 1/2 tsp
Milk - 1 liter
Khoya - 1 cup (grated)
Sugar - 1/2 cup
Saffron strands
Cardamom powder - 1/2 tsp
Chopped almonds and cashew nuts
👉Process:
1. Soak the Low GI rice in water for 30 mins. Take a pan and heat ghee, add soaked rice, saute for a minute and add milk. Bring to boil on low medium heat stirring continuously.
2. Once the milk starts thickening, add grated khoya and stir until it dissolves.
3. Simmer for 20 minutes on low heat until rice is cooked and stir to prevent sticking.
4. Add Diabetic sweetener and chopped nuts, stir to combine well.
5. Once the rice is fully cooked and the kheer thickened add a few saffron strands and mix well. Let it cool down at room temperature. Garnish with chopped nuts and Enjoy!
