The featured recipe is a bountiful salad of verdant broad beans, courgette and butterbeans, with creamy mozzarella and pangrattato, which is a classic Italian garlic and rosemary crumb. It's a great way to use up stale bread, and is great on top of pasta or over a platter of roasted veg; we're sure you'll want to make it again and again!
