🟢材料:
雞 1 隻
薯仔(馬鈴薯/土豆)600 克
蒜頭 3 粒
薑 適量
紹興酒 1 湯匙
蠔油 1 湯匙
糖 1 茶匙
老抽、鹽、胡椒粉 、油 適量
🟢做法:
1️⃣ 雞肉洗淨吸乾水,切件。加入適量鹽、胡椒粉和 1 湯匙紹興酒醃制 30 分鐘。
2️⃣ 薯仔去皮切塊,炸至微金黃色,撈出待用。
3️⃣ 熱鍋加入少量油,先煎雞肉至表面金黃色,舀出過多的雞油,加入薑和蒜頭爆香,灒 1 湯匙紹興酒,加入炸好的薯仔和 1 湯匙蠔油,1 茶匙糖,炆 5 分鐘。最後加入適量老抽調色,收汁上碟即可。
🟢Ingredients:

Potatoes, 600g
Garlic, 3 cloves
Ginger, a small piece
Shaoxing wine, 1 tablespoon
Oyster sauce, 1 tablespoon
Sugar, 1 teaspoon
Dark soy sauce, salt, white pepper powder, oil, as needed
🟢Cooking Directions:
1️⃣ Rinse the chicken and pat dry. Cut into pieces. Marinate with salt, white pepper powder, and 1 tablespoon of Shaoxing wine for 30 minutes.
2️⃣ Peel and cut the potatoes into chunks. Fry until lightly golden brown. Set aside.
3️⃣ Heat the wok with a little oil. Fry the chicken until the surface turns golden brown. Remove excess chicken oil. Add ginger and garlic to stir-fry until fragrant. Pour in 1 tablespoon of Shaoxing wine, and add the fried potatoes, 1 tablespoon of oyster sauce, 1 teaspoon of sugar. Braise for 5 minutes. Finally, add some dark soy sauce to adjust the color. Serve.
