Tips for cooking Okra Soup
1. Cut the Okra, don't blend it. This is so that the Okra soup will not be mushy when done. Okra soup is very slimy and blending the Okra makes is even slimier.
2. The tinier you cut the okra, the more it will draw. Remember that the okra is not getting any help from Ogbono so cut them as tiny as possible.
3. Cook the Okra for only a few minutes so that it will look green and appetizing when you serve the dish. The more you cook the Okra, the more they change from green to dark brown and the Okra soup will look unappetising. The total cooking time from putting the oil in the pot to serving was 10 minutes and I did that at medium heat.
