CASSAVA (YUCA) BALL

Cassava is a long tuberous starchy root also known as Yuca, common in many Guyanese cuisines. It is eaten mashed and used to make bread and chips. Let me introduce to you my version of cassava ball, one of my all time favorite snack served with spicy mango or tamarind chutney (sour).

INGREDIENTS
▪️1 cassava root
▪️1 tsp garlic powder
▪️1 tsp onion powder
▪️1 tsp basil
▪️1 tsp cayenne pepper/ or wiri wiri pepper (optional)
▪️1 egg
▪️1 cup panko breadcrumbs
NOTES: you can use fresh garlic, onion and scallion (minced)

METHOD
▪️Cut, peel and wash cassava. Bring a pot of salted water to boil then add cassava, cook until tender then drain. Remove the vein from the middle of each piece.
▪️Mash with a potato ricer/masher until smooth. Add garlic powder, onion powder, basil, cayenne pepper, butter, whole milk, salt and black pepper. Mix until well combined.
▪️Scoop mixture and form into balls. In a small bowl, whisk egg and in a separate bowl place panko breadcrumbs. Working one at a time, dip ball into egg mixture then into panko breadcrumbs until well coated. Repeat with remaining cassava balls.
▪️Heat avocado oil in a small deep pan. Carefully place balls in batches into the hot oil, keep turning, cook until golden brown about 1 minute.
▪️Let it cool and serve with tamarind or mango chutney (sour). That’s it. Enjoy!
