Palak Ka Raita:
Ingredients:
Yogurt 250 gram
Boiled spinach ½ cup
Green chili (finely cut) 1 tsp
Green coriander 2 tbsp
White cumin ½ tsp
Milk 4 tbsp
Salt to taste
Spinach (finely cut) 1 cup
Raisins 1 tbsp
Oil for frying
Cream 2 tbsp
Method:
Heat 2 tbsp oil in a pan then fry white cumin and green chilies in it. Then add boiled spinach and green coriander and cook for a while. Now add cream and mix well and let it cool down. Then add salt in yogurt and beat well. Now add 4 tbsp oil and raisins then take out in a bowl. Then deep fry rest of the spinach so that it gets crispy. Now take out and pour on prepared raita.
Malai Boti Handi:
Ingredients for chicken marination:
Chicken (boneless cubes) 500 gram
Ginger garlic paste 1 tbsp
Meat tenderizer 1-1/2 tsp
Salt 1 tsp
Green chilies (blended) 1 tbsp
White cumin 1 tsp
Yogurt 4 tbsp
Cream 2 tbsp
Coal 1 piece
Oil 2 tbsp
Ingredients for gravy:
Blended onion 1
Yogurt ½ cup
Ginger garlic paste 1 tbsp
Salt to taste
White pepper ¾ tsp
Cream 4-5 tbsp
Milk ½ cup
Oil ½ cup
Ingredients for garnish:
Onion (cubed) as required
Capsicum (cubed) as required
Green chilies (cut lengthwise) as required
Butter 2 tbsp
Method
Except coal put all ingredients in chicken and leave for 2 hours. Now grill it and give coal smoke. Then heat oil add blended onion, ginger garlic paste, salt, white pepper and yogurt and saute well. Now add cream and milk. When boil comes then add grill chicken and let it simmer for 5 minutes. Then fry onion, green chili and capsicum in butter and put in handi and serve.
Chanay ki Daal Lauki:
Ingredients:
Boiled split Bengal gram 2 cups
Bottle gourd 2 cups
Onion 1
Tomatoes 2-3
Salt to taste
Red chili powder 1 tsp
Turmeric ¼ tsp
Whole all spice as required
Oil ¾ cup
Mint leaves 2 tbsp
Green chili 2-3
Method:
Heat oil and fry onion in it. Then add whole all spice, tomatoes, salt, red chili powder and turmeric and saute well. Now add bottle gourd pieces and saute. Then add boiled split Bengal gram and leave it on dum. When bottle gourd get tender add mint leaves and green chilies, mix well and serve.
