IDICHAKKA CURRY/IDICHAKKA MASALA/ Tender Jackfruit Curry

HEALTH BENEFITS OF JACK FRUITS:
Jackfruit has abundance of important minerals. It is rich in magnesium, which is important for the absorption of calcium and helps strengthen the bones and prevents bone-related disorders such as osteoporosis. Jackfruit contains functional compounds that have capability to reduce various diseases such as high blood pressure, heart diseases, strokes, and bone loss. It is also capable of improving muscle and nerve function, reducing homocysteine levels in the blood. Jackfruit is also a good source of vitamin C. Iron in jackfruit helps to prevent anaemia and aids in proper blood circulation and copper plays an important role in thyroid gland metabolism
Ingredients :
Tender Jack Fruit (Idichakka)- 500 Gms
Sliced Coconut – 3 TBS
Onion – 1 chopped
Garlic Chopped- 1 TSP
Ginger Chopped-1 TSP
Curry Leaves- Little Coconut Oil- 3 TBS
Mustard seeds- Little
Salt to Taste
Water 1 ½ Cup (As required)
For Masala:
Turmeric Powder- 1/4th TSP
Coriander Seeds- 2 TBS
Clove-2
Cinnamon Stic- small
Fennel Seeds- ½ TSP
Cumin Seeds- ½ TSP
Black Peppercorn- 6 to 8
Kashmiri whole Chilli-4 Nos
Whole Red Chilli- 3 to 4 Pcs
Bay Leaf - 1
METHOD:
Clean the jackfruit skin, make small pieces, wash it once. Then fry it for 6 to 8 Min (Adding little salt.. (Don’t allow to burn it or Over cooked) Keep aside.
In a Mixer Jar, add Dry Roasted masala Mix, Grind it in a Smooth Powder.
Heat 3 TBS of Coconut Oil in a Pan/Kadai. Add Mustard Seeds, Chopped Onion, Ginger, Garlic and Curry leaves. sauté till its become light brown. Then add Grinded Masala, Mix well, Sauté for 30 Secs. Then add fried Jack Fruit. Mix Well. (Check salt, add if required). Add 1 Cup water, Mix well. Close the lid for 10 Min. in low Flame. (If its stick on pan, Stir in between) . Last Add some curry leaves Mix. It will be thick Dry Masla. Then Put off the Flame. Your delicious Tender Jack fruit Curry/Masala is Ready to Serve.
Serve Hot with Rice/Chapati/Porota.
