This is an Americanized version of a traditional Swedish rye bread that uses crushed cardamom and anise seeds. The addition of raisins and orange juice compliment these spices. This bread is delicious when toasted and smothered in butter. Here's the recipe:
375 g all-purpose flour (2-2/3 cups)
125 g dark rye flour (scant 1 cup)
250 g water (just over 1 cup)
2 tsps instant yeast
2 tsps sea salt
1/4 cup honey
1 tsp ground anise seeds
1 tsp cardamom seeds
2 Tbsps orange peel
80 g orange juice (1/3 cup)
Generous amount of raisins
NOTE: You can use already-ground cardamom and anise, available at many supermarkets. You can also substitute cinnamon, allspice, or fennel seeds, if you can't find cardamom and anise.
