This Korean Banchan is a home run for Gochujang lovers. Take fresh Shishito peppers (mild, wrinkly peppers), dredge with flour and steam. Make up delicious Gochujang sauce and toss all together.
Sounds simple, right? It is. And for something so simple, it's surprisingly delicious as well.
Addendum:
1. Kkwari is the name of the Shishito pepper in Korean. Gochu means Pepper and JJIM translates to a steamed dish.
2. This recipe usually features Shishito peppers as they are a perfect mild (read: bland) canvas for the Gochujang sauce to shine. However, some people will use regular Korean peppers. Feel free to improvise, but keep in mind Gochujang and Gochugaru bring some heat and experiment accordingly 🔥🤯🔥.
3. Tips on getting better coverage of flour:
- If you've done a too-good a job draining the peppers after washing, give them a spray to get them nice and wet again.
- Sometimes using 2 spoons instead of hands lets you be gentler. Toss the peppers in the sauce/dressing like a salad.
- Be gentle and toss lightly!
- Once peppers are in the steamer basket, sprinkle on some extra flour .
4. Steam just until there is no more powdery flour- usually only 5-7 minutes.
5. I meant "Toasted" (sesame oil and seeds) rather than "Roasted". But roasted/toasted, you know what I mean.
6. Try to control self when eating 😁.
