250g water, 94c
Grind: medium-fine
0m00s: Pour 50g of water to bloom
0m10s - 0m15s: Gently Swirl
0m00s - 1m00s: Bloom (I will sometimes shorten the bloom to 45s - subsequent times also shortened.
1m00s - 1m10s: Pour 50g, up to 100g total
1m10s - 1m20s: Pause
1m20s - 1m30s: Pour 50g, up to 150g total
1m30s - 1m40s: Pause
1m40s - 1m50s: Pour 50g, up to 200g total
1m50s - 2m00s: Pause
2m00s - 2m10s: Pour 50g, up to 250g total
2m10s - 2m15s: Gently swirl
Drawdown should take place somewhere between 2m30s and 3m30s
UFO:
15g ground coffee
250g water, 92c
Grind: medium-fine - slightly coarser than v60 above
0m00s: Pour 50g of water to bloom. Low agitation, small circles, sub 7g/sec. No swirl
1m00s: Pour 50g up to 100g. Low agitation, small circles, sub 7g/sec
1m30s: Pour 50g up to 150g. Low agitation, small circles, sub 7g/sec
2m00s: Pour 100g up to 250g, 16+g/sec, divided into two structures as detailed below:
- First 50g of final pour: circle pour, high agitation, to lift up fines from the edges of the dripper wall
- Second 50g of final pour: center pour, high agitation. to keep the fines suspended on top of the bed in order to decrease the fines contact time with water, thus preventing over extraction of those fines and clogging.
