For farmer’s cheese:
MILK - HALF A GALLON (1.89L)
KEFIR - 32 FL.OZ. (946ml)
1. Milk, cook for 5-7 minutes over medium heat
2. Add lemon juice (1 lemon) and cook for 12 -15 minutes over low heat
3. Add kefir
Reduce the heating of the stove to a minimum
Stir constantly while cooking
Turn off the heating
Cover and leave for 10-12 minutes
Be careful when squeezing the cheese, it is still hot

For cheese pancakes:
Farmer’s cheese (350-360gr)
One egg
Add 1 tablespoon of sugar
Add 1 teaspoon of salt
Add 1 teaspoon of vanilla extract
Add 1 tablespoon of flour
Add 1 tablespoon of semolina
Add 1/2 teaspoon corn starch
*mixed all ingredients well
Put the lid on and leave in the refrigerator for 15-20 minutes
