All South Africans just love boerewors rolls and lovingly refer to this South African delicacy as 'boeries'. The traditional boerie consists of a hotdog roll with a piece of boerewors on the inside, together with fried onions or smoor (a tomato and onion broth). In some cases the onion or smoor may be missing, in which case the boerie is served with ketchup or mustard and in some cases, both. In this recipe we take the boerie to new heights by creating this luxurious version in a toasted french loaf. You can almost call it a traditional South African Burger, since in this version the meat and salad both appears inside a toasted roll. A true treat and especially nice on Saturdays for lunch before live sport on the TV. True to its roots, even this luxury version remains economical to make, although the taste and feel of it is true gourmet! This is one of my all-time favourite recipes. Rinsing this feast down on a hot, sunny Summer afternoon with a refreshing and crisp Sauvignon Blanc from SPIER Wine farm with fruity flavors of green guava, pear and hints of litchi on the nose and a well-balanced palate around the fire, is a memory to savor for a long time.
