Marinated sardines are a delicious and healthy dish that can be enjoyed in many parts of the world. They are rich in omega-3 fatty acids, protein, calcium and vitamin D. You can marinate them with different ingredients such as lemon, garlic, soy sauce, ginger, parsley, thyme or peppers. But I am preparing today a very simple marinade, the result of which is excellent sardines, fresh and juicy, a recipe that reminds me of my childhood. My mother taught me this recipe, however she likes to add cloves too. Since I am not particularly found of cloves, I omitted them in this recipe. This sardines marinade recipe certainly reminds me of my childhood, and any ready made sardines I find in stores here in the UK were not tasting as I liked, so I managed to recreate the taste with my mother's help.
In this marinade I used:
1 kg of fresh or defrosted sardines (about 700g cleaned)
Water: as much as to cover the fish in your air-tight container (about 400ml)
You can measure the water quantity by submerging the fish into water in the container you intend to marinade them.
2 table spoons salt
1 table spoon sugar
1 tea spoon black peppercorns
1 tea spoon coriander seeds
Bay leaves
2 table spoons vinegar 5%
2 table spoons vegetable oil
Add cloves if you like
