Preparation:-
Beat 2 eggs with salt and black pepper in a bowl heat 1 tbsp oil in a kadai and add the beaten eggs then scramble it on medium heat. This should take a minute. Remove it on a plate and set aside.
Add 2 tbsp oil.
Add chopped garlic. Give a stir and fry it on high heat for around 30 secs.
Add the chicken and stir fry on high heat for 2 min till they turn white.
Now add the salt , black pepper powder, and soy sauce mix and stir fry for around 5 mins on high heat till the strips are browned.
Add the julienned carrots ,capcicum and shredded cabbage, mix and stir fry for 3 min.
Add the cooked rice and mix with the chicken and veggies.
Season with a pinch of salt and 1tsp black pepper powder. Give it a mix.
Add 1 tsp of white vinegar and 1 tsp of soy sauce. Toss and fry for 2 mins on medium heat.
Add the scrambled egg and toss well and serve.
