This is a perfect healthy Poha recipe loaded with Veggies and perfectly moist.
Thick Poha is used
Vegetable Poha
Ingredient :
2/3 cup Oil
1 cup Poha
1 and 1/2 tsp Mustard Seeds
1/2 tsp Cumin Seeds
3/4 tsp Fennel Seeds
Pinch of Asafoetida / Hing
2-3 tbsp Peanuts
2 tbsp Cashews ( Optional )
6 Green Beans
1/2 Carrot
1 Potato
3/4 cup chopped green Bell Pepper
1/3 cup chopped Yellow Bell Pepper
1/3 cup chopped Red Bell Pepper
2 green Chili
1 inch Ginger
1 tbsp chopped Curry Leaves
1 tsp Turmeric Powder
3/4 tsp Salt or As per taste
1/2 tsp Salt ( For Mixing with Soaked Poha )
2 tsp Sugar ( Optional )
1 cup chopped Cabbage
1/2 cup Green Peas
2 tbsp Lemon Juice
1/3 cup chopped Tomatoes
1-2 tbsp Raisins ( Optional )
1/4 cup chopped Coriander Leaves
Pomegranate
