CHICKEN BIRIYANI -
This is a South Indian (Tamil Nadu) style Chicken Biriyani.
Ingredients :
For Biriyani Masala :
Cinnamon - 2 inches
Pepper - 1 tsp
Cardamom 6 - 8
Cumin - 1 tsp
Cloves 10 - 12
Method :
Roast all the above spices in a low heat for about 5 - 7 minutes. Let it cool and blend it into a fine powder.
For Biriyani :
Chicken - 1 kg
Basmati Rice (washed & soaked - 30 mins) - 675 gms (3 cups)
Oil - 50 ml
Cinnamon - 1 inch
Cardamom - 4
Cloves - 5
Star Anise - 2
Bay Leaves - 2
Onion - 2 big
Ginger Garlic Paste - 3 tbsp
Tomato - 2 big
Turmeric Powder - 1/2 tbsp
Chilli Powder - 4 tbsp
Yogurt - 3 tbsp
Lime Juice - 2 tbsp
Ghee - 2 tbsp
Water - 900 ml (4 1/2 cups)
Coriander and Mint Leaves - 1 bunch each
Green Chillies - 4
Salt to taste
Method :
- Heat the oil and saute the whole spices for about 1 minute
- Add onions - Fry until golden brown
- Add ginger and garlic paste - saute until raw smell goes away
- Add tomatoes - saute until soft
- Add handful of coriander and mint leaves
- Add washed chicken, turmeric powder, chilli powder and mix well - cover and cook for about 15 mins
- Add yogurt, ground biriyani masala - cover and cook for 5 more mins
- Add soaked basmati rice and water
- Add lime juice, green chillies and ghee
- Cover and cook in high heat for about 15 - 20 minutes, once the rice is half cooked, cook in low heat for 30 minutes.
- For best results turn of the heat and let it rest (DO NOT OPEN THE LID) for 15 minutes.
Serve with onion raita.
