Recipe:
Ingredients for the filling:
• Shrimp
• Calamari
• White fish fillet
Steps for cooking the seafood:
1. Sauté the seafood in butter, black pepper, salt, and garlic powder until cooked through.
For the mushrooms:
• Fresh mushrooms sautéed in butter with salt and black pepper.
For the marinade (Charmoula):
• A small bowl of chopped cilantro and parsley
• 1 preserved lemon, finely chopped
• A touch of harissa
• 1 tbsp of minced garlic
• 1 tbsp of paprika
• Shrimp stock or fish sauce
• Soy sauce
• A pinch of salt
• Olive oil
• Juice of half a lemon
Additional ingredients:
• Vermicelli rice noodles (soaked and drained)
• Chinese black mushrooms (rehydrated)
• Fresh mushrooms
• Poppy seeds
• Brick pastry or phyllo dough
Assembly:
1. Mix the cooked seafood, mushrooms, and vermicelli with the marinade.
2. Layer phyllo dough or brick pastry in a baking dish, brushing each sheet with melted butter.
3. Add the filling, then fold over the dough to create a sealed pie.
4. Sprinkle poppy seeds on top and bake until golden.
