Well hello there gangstas, this roll cake is super soft, light, fluffy and overall just absolutely delicious.
A quick matcha sponge filled with earl grey tea cream and mixed berry jam. This shit is way too good to pass up on, trust me you'll devour this easily!
Don't believe me? Again? Bruh... cut the lack of faith and just do it. Make it or let me describe to you in words. Imagine my soft whispering voice mmm yes mmmmm woooo oo weeeee~
Smells fragrant just like tea, but wait I'm confused yet intrigued! It smells of not one but two teas, it's perfumey from the earl grey and that deep matcha scent smells so matcha.
Then when I pick it up, its so soft, wet, moist, fluffy... I know this is gonna be good. Oh my lawdy hold on to your seats! I'm not going for a little bite... no no this deserves one big consumption of inhaling this majestic wonder. Cold and soft, OH MY... It's yeah its delicious.
It tastes like a maths problem that seemed like it was so hard to get the answer to, and you're not sure if the answer's right... Then you get the results and it's right. It's that satisfying feeling... But with food. Okay thanks bye.

Here’s what you’ll need:
Matcha Sponge:
4 Yolks
50g Sugar (A)
4 Whites
120g Sugar (B)
30g Matcha powder
100g Hot water
60g Flour
Mixed Berry Jam:
200g Frozen mixed berries
65g Elderflower syrup
35g Sugar
2g NH Pectin
Earl Grey Tea Cream:
Add in 15g of loose earl grey tea into your mixture when making diplomat cream.
