This is a second version of my 7 minute pie! It is so quick and it couldn't be any easier! As long as you have a few things on hand in your kitchen, from start to finish in 7 minutes you can be enjoying a tasty coconut cream pie! Fantastic way to introduce children to being in the kitchen!
1 3.4 oz box of INSTANT Coconut Cream pudding mix (different flavors can sometimes be 3.9 oz)
1 1/4 cups heavy whipping cream
1/4 cup milk (plus 1-2 Tablespoons on hand for thinning a little if needed)
1/4 cup shredded coconut minced fine (optional)
1 pie crust graham cracker, vanilla wafer, Oreo or even a regular pie crust (either ready made or click here to see how I make my graham cracker or vanilla wafer crust: [ Ссылка ] )
whipped cream or cool whip (optional)
Add heavy cream, milk and pudding mix into a mixing bowl. With a mixer beat until smooth and thick (if it seems overly thick, add 1-2 Tablespoons more of milk). When thoroughly mixed and thickening add in the minced coconut. Remember you DO want it thick. If using a deep dish pie crust you may want to make a 1/2 box more. In the video I was just making a regular pie shell. Remember, this will set up fast, so when smooth and thick and thoroughly mixed immediately spread evenly into the pie shell. Refrigerate about 10 minutes so it can finish firming up. Top with whipped cream from a can or cool whip if desired.
NOTE** I used a stabilized whipped cream from scratch so that it would hold its shape.
