Masala Baked Beans on Toast
Serves 1-2
1 tin baked beans
2 slices of your preferred bread
50g red leicester or mature cheese
1 tablespoon olive oil
1/4 tsp mustard seeds
1/2 tsp cumin seeds
1/2 chopped onion
1 clove garlic sliced
1 green chilli thinly sliced
1/2 tsp chilli powder
1/4 tsp turmeric
Pinch black pepper
1/2 tsp coriander powder
For extra flavour 1/2 tsp garam masala or smoked paprika
To Make
Heat oil, add mustard seeds as oil heats mustard seeds will start to pop.
Add cumin seeds, when they sizzle add the chopped onions, garlic and green chilli (if using).
Let onion cook for two mins then add baked beans.
Add the spices, if you don’t want it too spicy leave out the chilli powder.
Let spices and beans fuse for a few minutes.
Toast bread and grate cheese.
On your toasted bread add the beans, grated cheese, you can add chopped chives or coriander (optional)
Place under a hot grill until the cheese has melted to your preference.
Enjoy.
PS change up the spices, you can leave out the onions etc.
