This delicious vegan eggnog is a great recipe. Rich and creamy. Serve warm or cold for a perfect winter dinner or as a dessert 😋
INGREDIENTS:
- 1 cup cashews
- 2 cups of water
- 1/2 vanilla pod
- 1 tsp cinnamon powder
- 1/2 tsp cloves powder
- 3 dried pitted dates
- 1/4 tsp ground nutmeg
- 2 tbsp syrup
- 1 tbsp vanilla sugar
- 200 ml coconut syrup
- shot of rum
INSTRUCTIONS:
Put cashews and water into the blender and blend until smooth.
Put the vanilla pod on cutting surface and cut lengthwise. Use the edge of the knife to scrape the seeds.
Put the vanilla seeds straight into the cashew milk.
Add cinnamon powder, cloves powder, dates, ground nutmeg, syrup, vanilla sugar and coconut milk. Blend until it becomes nice and creamy, then add a shot of rum into the blender.
Blend again for a couple minutes or longer to get the perfect texture.
Transfer into a glass container.
Keep in the fridge overnight then ENJOY!
You can serve it warm or cold.
