Ingredients:
Oil 1 tbsp
Bayleaf 1 pc
Blackpepper 10-12 pcs
Cloves 3-4 pcs
Cinnamon 1 inch
Garlic 8-10 cloves
Ginger sliced 1 inch
Green chilli slit 2 pcs
Onion diced 3 pcs
Potato diced 2 pcs
Carrot 1 pc
Water as required
Salt 1 tsp
Oil ½ tbsp
Butter 1 tbsp
Carrot chopped ½ cup
French beans chopped ½ cup
Green peas ½ cup
Add pressured cook vegetable puree
Water as required
Salt to taste
Sugar 1 tbsp
Fresh cream 3 tbsp
Method:
Step 1: Prepare the Base in the Pressure Cooker
Heat oil in a pressure cooker.
Add bay leaf, black pepper, cloves, and cinnamon. Let them release their aroma.
Add garlic, ginger slices, and slit green chilies. Sauté until the garlic browns slightly.
Add diced onions and sauté until they soften.
Add diced potatoes and carrots, stirring to coat them with the spices.
Pour in enough water to cover the vegetables, and season with salt.
Close the pressure cooker lid and cook until the vegetables are soft (about 3-4 whistles).
Step 2: Blend the Cooked Vegetables
Once the pressure releases naturally, open the cooker.
Remove the bay leaf and whole spices if preferred.
Blend the cooked vegetables into a smooth puree using a blender or immersion blender.
Set the vegetable puree aside.
Step 3: Cook the Fresh Vegetables
In a separate pan, heat oil and butter together.
Add finely chopped carrots, French beans, and green peas.
Sauté until the vegetables soften slightly but retain some crunch.
Step 4: Combine and Simmer
Pour the vegetable puree into the pan with the sautéed vegetables.
Stir well and add water as needed to reach the desired soup consistency.
Season with salt and a little sugar to balance the flavours.
Let the soup simmer for a few minutes, stirring occasionally.
Step 5: Final Touch
Stir in fresh cream to give the soup a creamy texture.
Simmer for an additional minute or two.
Serve hot.
