Recipe Name: Pineapple Curry

Ingredients:
Pineapple (chopped) - 1 cup
Grapes- Few
Jaggery- 1 Lemon sized
Turmeric powder- 1/4 tsf
Water-As required
Salt -As per taste
For Masala
Oil- 1 tsf
Split chickpea lentils - 2tsf
Split black gram - 2tsf
Red chilies - 5-6
Sesame seeds - 2 tsf
Fenugreek seeds - 1/4 tsf
Coconut (grated) - 1 cup
Tamarind - small lemon sized
For seasoning
Curry leaves - Few
Mustard seeds- 1tsf
Red chilies- 2
Oil- 2tsf
Method:
Cook Pineapple along with jaggery, salt and water for 5 minutes on a medium flame. Meanwhile to prepare masala, roast split chickpea lentils, split black gram, red chilies, fenugreek seeds, sesame seeds and coconut using 1 tsf oil. Grind these together to a fine paste by adding little water once it cools down.
Now, add 1/4tsf of turmeric powder and grapes to the pineapple, cook for 2 more minutes. Add ground masala to the pineapple, adjust water, salt and sweetness. Mix well and cook for 2 more minutes. Switch off the flame once you see the boiling bubbles in the curry.
Season with mustard, curry leaves and red chilies, serve hot with rice/appam/chapati/dosa.
