Ingredients:
• 200g Egusi seeds (ground)
• 500g meat or fish (beef, goat meat, chicken, or fish), cut into bite-sized pieces
• 2 medium onions, chopped
• 1 teaspoon grated garlic
• 1 teaspoon grated ginger
• 3 Scotch bonnet pepper
• 3 cayenne pepper
• 2 red bell pepper
• 2 yellow pepper
• 1 medium tomatoe
• seasoning
• 1 tablespoon ground crayfish
• 1 teaspoon Cameron pepper
• locust beans
• cow skin (ponmo)
• stock fish (okporoko)
• smoked fish (panla)
• shrimp, optional
• Salt to taste
• 1 cup palm oil
• 1cups water
• 2 cups meat stock
• uziza seed
• uziza leaf
• ugu, Spinach or other leafy greens
Instructions:
Step 1: Cook the meat

0:06 Boil 500g meat in a large pot over medium heat.
0:12 Add seasoning cube, salt, ginger paste, garlic paste and water.
0:29 Add the chopped onions, stir well and cook until softened (45-1hr).
Step 2: Prepare the Egusi seeds
0:38 Mix Egusi with blended onion and meat stock.
Step 3: Add the Egusi seeds and spices
1:10 Add palm oil into a heated pan.
1:15 Scoop the ground Egusi bit by bit into the pot.
1:24 Add 1/2 cup of water and the meat stock. Cover and let it steam on low heat for (2min).
1:36 Add locust beans, mixed pepper, stir gently. (You don’t want to break the lumpy Egusi)
1:52 Add cow skin, stick fish, smoked fish, shrimp and meat, stir until just combined.
2:35 Add the remaining 1/2 of water.
2:39 Add the crayfish powder and Cameroon pepper. Cover and let it Cook for 5 minutes, stir gently.
Step 4: Add leafy greens (optional)
2:58 If desired, add leafy greens, Ugu and Uziza leaf (optional)
3:15 Simmer for an additional 2 minutes.
Step 5: Serve
3:20 Serve the Egusi soup hot, garnished with chopped fresh herbs or scotch bonnet pepper (optional).
Tips and Variations:
• Grind the Egusi seeds into a fine powder using a blender or food processor.
• Use a mixture of meat and fish for added flavor.
• Add other spices, such as native fish spice, ogiri okpei, for extra flavor.
• Use different types of leafy greens, such as bitter leaves or kale.
• Serve with pounded yam, fufu, garri, or rice.
