The Ragu
- 800g / 28 oz ground beef or pork
- 400g / 14 oz chopped tomatoes
- 1 Onion
- 3 Garlic cloves
- Bunch of fresh basil & parsley
- Oregano
- Salt & Pepper
1. Begin by finely chopping your onion, garlic, basil & parsley
2. Sauté your chopped onions & garlic on a medium-high heat
3. Brown your ground meat
4. Add your chopped tomatoes and season
5. Reduce for 1 hour on a low heat or until the sauce tastes rich and the bitterness of the chopped tomatoes has been removed.
The Roux
- 100g / 4oz all purpose flour
- 100g / 4oz unsalted butter
- 1L/ 34 oz whole milk
- Nutmeg
- Salt & Pepper to taste
- Parmesan
- Fresh mozzarella
1. Melt your better and whisk in your flour. Ensure there are no clumps. Allow to cook for at least 2 minutes.
2. Warm and add your milk in 3 portions, taking care to whisk vigorously. Ensure the flour/butter roux is thoroughly mixed in with the milk.
3. Add nutmeg, salt and pepper to taste.
4. As the sauce starts to thicken, reduce the heat and add your preferred cheeses.
5. Once the sauce has thickened, remove it from the heat.
