Crispy fried vegetable or Veg crispy is an Indo-Chinese dish and is a very popular fast food. The taste of it; is kind of addictive, you cannot stop by just eating one. It has lot of veggies in it which is coated in corn flour and tossed in tangy sauce. You visit and Indo-Chinese food joint and you will get this amazing dish in the menu. Ingredients -
Batter-
Maida / plain flour / all-purpose flour -2tbsp
Corn flour -3tbsp
Black pepper powder -1/2 tsp
Refined oil -1 tsp
salt to taste
water as required
Vegetables -
Capsicum red and green, cubed -2tbsp
Baby corn, chopped -3 (Boiled)
Beans chopped -2tbsp
Carrot, cubed -1/2
Cauliflower and broccoli, florets -2tbsp (Boiled)
Oil for deep frying
Sauce -
Oil -2tsp
Garlic, finely chopped -5-6
Green chili, slit -2
Spring onion, chopped-2 tbsp
Red chili sauce -tbsp
Tomato sauce -2tbsp
Soy sauce -1tbsp
Salt to taste
Making the Crispy veg -
• In a large mixing bowl take all the veggies and add 1 1/2tbs corn flour,1 ½ tbsp refined flour and salt. Toss the veggies completely to get coated.
• In another bowl, take corn flour, refined flour, salt, black pepper and oil. Mix well. Add water to make a batter of flowing consistency.
• Add in vegetables and coat well with batter.
• Deep fry the veggies in hot oil till it is cooked and light.
• Let the vegetables rest for 10 minutes.
• Flash fry the vegetables till it is crisp and golden brown. Take it out on an absorbent paper.
• For sauce, add oil in a pan. Add in chopped garlic, green chili and spring onion.
• Sauté on high flame for a minute.
• Now add the chili sauce, tomato sauce, soy sauce and salt to taste.
• Mix well on high flame till the sauces gets combined well. Add the fried vegetables and give a quick stir.
• Crispy veg is ready to be served hot as a starter with garnish of spring onion.
