Anna’s Beyond Meat Stuffed Bell Peppers 🌶
Ingredients:
6 Bell Peppers
1lb Beyond Meat Beef
1/2 - 1 Cup Rice
1 Onion
4 Garlic Cloves
16oz of Tomatoes
Grated Cheese
Worcestershire Sauce
Salt & Pepper
Olive Oil
Add approximately 3 cups of water to a pot and let it come to a boil. Once boiling, add the rice and let it cook until the water has evaporated and the rice is thoroughly cooked.
Next, chop the onion, garlic and tomatoes into small pieces.
Add some olive oil to a pan on medium heat, and add the beyond meat -- mince it up.
Then add the onion, garlic and tomatoes and let it cook until the “meat” has browned.
In the meantime, slice the tops off the bell peppers and de-seed them. We’ll use them to cover the stuffed bell peppers.
Add some Worcestershire sauce to the meat.
Once the rice and the “meat” is ready -- combine them, mixing thoroughly.
You’ll then stuff the bell peppers with the “meat”/rice mixture and top them off with the grated cheese (I chose Parmesan cheese but others will do).
Put the bell peppers into a baking pan and cover them with the bell pepper tops.
Bake at 350 degrees Fahrenheit for 30min.
I sautéed some sliced jalapeños in some olive oil and garnished mine with it. It’s completely optional!
