Resep Nasi Kulit Sambal Gledek (untuk 5-6 porsi)
Bahan:
300 gr kulit ayam
½ sdm garam
½ sdt merica
1 liter air
Bahan nasi:
375 gr Beras Premium Fortune
500 ml air
Bahan tepung basah:
100 gr tepung bumbu serbaguna
1 butir telur
1 sdt bubuk bawang bombai
50 ml air
Tepung kering:
Tepung bumbu serbaguna
Bahan sambal:
100 gr cabai rawit merah
5 siung bawang putih
6 siung bawang merah
50 ml Minyak Goreng Fortune
50 ml air
¾ sdt garam
1 sdt kaldu bubuk / penyedap
1 sdt gula pasir
Pelengkap:
Telur
Daun bawang iris
Garam dan merica secukupnya
Kol goreng
Langkah:
1. Cuci Beras Premium Fortune lalu masukkan air. Masak dengan rice cooker hingga matang
2. Untuk sambal, panaskan Minyak Goreng Fortune lalu goreng bawang putih, bawang merah, dan cabai rawit merah, masak sesaat
3. Masukkan bahan sambal ke dalam food processor, haluskan kemudian masak kembali
4. Tambahkan air, garam, kaldu bubuk, dan gula pasir, masak hingga minyak keluar di api sedang, sisihkan
5. Didihkan air kemudian masukkan garam, merica, dan kulit ayam, rebus selama 3-5 menit kemudian bilas hingga bersih
6. Masukkan ke dalam mangkuk lalu tambahkan tepung bumbu serbaguna, bubuk bawang bombai, telur, dan air, aduk hingga rata
7. Panaskan Minyak Goreng Fortune, masukkan kulit ayam ke dalam tepung kering hingga rata lalu goreng kulit hingga kering di api kecil sedang, tiriskan
8. Kocok telur, daun bawang, garam, dan merica secukupnya kemudian goreng hingga matang, sisihkan
9. Goreng kol hingga kering atau sesuai selera
10. Nasi kulit sambal gledek siap disajikan

Chicken Skin Rice with Sambal Gledek Recipe (yield 5-6 servings)
Ingredients:

½ tsp pepper
1 L water
Rice ingredients:

500 ml water
Wet Batter ingredients:
100 g seasoned flour
1 pc egg
1 tsp onion powder
50 ml water
Dry Flour Mix:
Seasoned flour
Sambal ingredients:
100 g red Thai chili
5 clove garlic
6 pc shallot
50 ml Fortune Oil
50 ml water
¾ tsp salt
1 tsp stock powder / MSG
1 tsp sugar
Add-ons:
Egg
Sliced green onion
Salt and pepper, to taste
Fried Cabbage
Steps:
1. Rinse Fortune Premium Rice Grains, then add water. Cook with a rice cooker.
2. For the Sambal, heat Fortune Oil. Fry the garlic, shallots, and Thai chili for a moment.
3. Add the Sambal ingredients into a food processor. Blend, then cook it again.
4. Add water, salt, stock powder, and sugar. Cook until oily on medium heat. Set aside.
5. Bring water to a boil, then add salt, pepper, and chicken skin. Boil for 3-5 minutes, then rinse well.
6. Transfer the chicken skin to a bowl, then add seasoned flour, onion powder, egg, and water. Mix well.
7. Heat Fortune Oil. Coat the chicken skin with the dry flour mix evenly, then fry it until crispy on medium-low heat. Set aside.
8. Beat the egg, green onion, salt, and pepper. Fry it on a pan and set aside.
9. Fry the cabbage until crisp or to taste.
10. Chicken Skin Rice with Sambal Gledek is ready to serve.
