How to make a healthy Chinese Soup - 蟲草花湯

Chinese soup recipes, even the herbal ones are really simple and easy to make. If available in your area, just walk into your local Chinese medical halls/shops and ask the shopkeeper to gather the ingredients for you. They're ready packed and ready to cook!
For this recipe, Cordyceps Flower Soup is a well known Chinese dietary therapy recipe. The cordyceps flowers are believed to be mild, neither cold nor dry, rich in protein, and can enhance our immune function, improving disease resistance. This soup is also good for our liver and kidney and has a cough-relieving function. This remedy is suitable for both the young and the old.
For this recipe, I used pork to make a Chinese herbal soup that is nourishing as well as savoury and easy to drink. It is really easy to make, especially if you have a slow cooker, its nearly fuss free.
Ingredients - 3 to 4 servings
Pork Fan Meat (扇骨肉) - 500gm
Radix Codonopsis(紋黨)- 15gm
Solomonseal Rhizome(玉竹)- 20gm
Huai Shan(淮山)- 10gm
Fu Ling(茯苓)- 10gm
Red Dates(紅棗)- 10 pieces
Astragalus Root(北芪)- 15gm
Goji berries(枸杞)- 10gm
Cordyceps Flower(蟲草花)- 20gm
Putting them together
The steps are really easy, just follow these:
1. Blanch pork in boiled water for about 5 minutes – this ensures that the soup comes out clear and without impurities at the end
2. Pour ingredients and meat into 2 Litres of water in a soup pot and bring it to boil
3. Once boiling, lower the heat to a simmer and allow it to continue to cook for another 1hr 30min
4. Season with salt according to your preference and let it cook for another 10 minutes before serving
5. If you are using a slow cooker, you just need to add all the ingredients, the meat and the water into the cooker and set it to cook on High for 3 hours or Low for 5 hours
6. It's ready to Serve!
You can have this soup with your normal meal, pair it with some other dishes or have it as just a chicken soup and rice combo.
