The Best Potato Cakes ~Leftover Mashed Potatoes

INGREDIENTS:

2 cups mashed potatoes
1/2 cup of your favorite cheese
1 tbsp flour
1 egg
1 tbsp dried chives
salt and black pepper to taste

Mix all ingredients in a bowl. Form batter
into 1 1/2" balls - about golf ball size.

In medium heat skillet coat bottom with oil.
Place potato balls into skillet and slightly
flatten to a cake.
Fry for approx 2 minutes on each side or
until golden brown.

Can serve for breakfast, lunch, dinner or
as a snack.

Enjoy.
