A traditional and famous dish from Shiraz, Kalam Polo consists of cabbage and small meatballs layered into rice with exotic spices, herbs, and flavors.
I have always wished to have Kalam Polo for lunch, and that could make me happier than anything. I used to stand in the kitchen beside my mother while waiting for her to give me a cooked meatball. At the same time, I was standing in the kitchen to listen to her singing old Shirazi folklore songs. Then, when the fragrance of fresh herbs and Kohlrabi spread in the house, I knew it was almost time to enjoy a perfect meal with my family.
Meatballs Ingredients:
16 oz 7% lean beef
1 onion
2 tsp chickpeas flour
1 tsp salt
½ tsp black pepper
¼ tsp turmeric
½ tsp paprika
1 pinch of chili flakes
3 garlic cloves
Fried Onions Ingredients:
frying oil as needed
3 large onions
1 tsp turmeric or to taste
2 pinches salt or to taste
1 pinch of black pepper or to taste
Kohlrabi Ingredients:
frying oil as needed
3 kohlrabi
½ tsp turmeric
½ tsp black pepper or to taste
1 tsp salt or to taste
¼ tsp paprika
juice of two lemons
4 fl oz water
Rice :
water as needed
2 lb rice
4 tbsp salt
1 tbsp turmeric
4 oz flat chives
4 oz basil
2 oz tarragon leaves
4 oz parsley
4 oz dill weed
