Ingredients:
Zeppola
160 ml / 0.66 cup of water
100 g / 3,52 oz of butter
5 eggs
A pinch of salt
Vanilla
Cream
500 ml / 2.11 cups of milk
45 g / 6 tbsp of cornstarch
50 g / 4 tbsp of sugar

How to make it:
First, prepare the zeppole dough.
Preheat the oven to 190° C / 374° F, as the dough needs to be prepared quickly.
In a medium saucepan, combine the water, butter and a pinch of salt.
When it comes to a boil, add the flour and mix immediately. Cook for 3 minutes, stirring constantly.
Remove from heat and continue stirring.
Add the 5 eggs one at a time and mix immediately until the mixture is smooth again, then add the second egg and so on until all the eggs have been incorporated.
Place the dough in a pastry bag with a very wide nozzle and make the zeppole.
You can make the classic zeppole on a baking sheet lined with baking paper by simply making a ring with two rounds of dough, about 6 cm in diameter, with a hole in the middle, like a doughnut.
But I want to make the giant zeppola, so I will make a kind of giant doughnut in a buttered doughnut-shaped baking pan, or you can make it directly on baking paper by making 3-4 turns with the dough, creating a ring about 22-24 centimeters in diameter.
Bake at 190° C / 374° F for 25 minutes if the zeppole are small and 35 minutes if they are large.
Prepare the cream.
In a saucepan, combine all the cold ingredients and mix well. Turn the heat to medium and stir slowly.
When it starts to boil, start stirring faster. When it comes to a boil, continue stirring for another minute, then remove from the heat and continue stirring for a few seconds.
In the meantime, cook the zeppole; when they cool down a little, they will deflate, especially if you made them big, this is normal.
Once the cream is cold, put it in a pastry bag with a large nozzle and fill the zeppole with cream, making holes every 5-6 cm.
Spread enough cream to make a circle of cream on top of the zeppole.
Place a black cherry in syrup in the center of this circle and coat the zeppole with the syrup from the black cherry.
Sprinkle it with powdered sugar to taste.
