How Do I Make Chicken Sajji ?
Chicken Sajji is a popular dish from the province of Balochistan in Pakistan. It is made by marinating a whole chicken with spices and then slow roasting it on a skewer over coals. Here's a recipe to make Chicken Sajji:
Ingredients:
1 whole chicken, about 1.5 kg, cleaned and washed
1 cup yogurt
2 tbsp ginger paste
2 tbsp garlic paste
2 tbsp lemon juice
2 tbsp red chili powder
1 tbsp cumin powder
1 tbsp coriander powder
1 tbsp garam masala powder
Salt to taste
1/2 cup vegetable oil
Charcoal for grilling
Aluminum foil
Instructions:
In a bowl, mix together yogurt, ginger paste, garlic paste, lemon juice, red chili powder, cumin powder, coriander powder, garam masala powder, salt, and vegetable oil to make the marinade.
Make 2-3 deep slits on the chicken using a sharp knife.
Apply the marinade all over the chicken, including inside the slits. Make sure the chicken is coated evenly with the marinade. Cover the chicken and refrigerate it for at least 2 hours or overnight for best results.
Preheat the oven to 350°F (180°C).
Wrap the chicken with aluminum foil and place it in a baking dish.
Bake the chicken in the oven for 30-40 minutes or until it's almost cooked through.
Meanwhile, heat the charcoal until it turns white and hot.
Remove the chicken from the oven and transfer it to a skewer.
Place the skewer with the chicken over the hot charcoal and grill it for 15-20 minutes, turning occasionally, until it's golden brown and fully cooked.
Remove the chicken from the skewer and serve hot with naan, roti, or rice.
