A dinner so good it has to be magic! Come with me as I make a beautiful color changing cocktail with Empress gin and easy 3 ingredient Carbonara!

Carbonara:
1 lb spaghetti
1 lb bacon (cubed)
4 ounces grated parmesan
4 ounces grated pecorino romano
2 ounces of olive oil
7 eggs
2 cups pasta water (may vary)

In a large pot on high heat bring 8 cups of salted water up to a boil. Once at a rolling boil add in your spaghetti and cook until al dente approximately 10-13 minutes.
While your pasta is cooking shred your parmesan and pecorino then add to a large mixing bowl. In a separate bowl add in two whole eggs and 5 egg yolks. Add your 8 total ounces of shredded cheese to the large bowl with your eggs and whisk until fully incorporated.
In a sauté pan on medium heat add in your olive oil and your bacon in 1/4 in cubes and cook until crisp then strain into a bowl.
Once your pasta has cooked strain and save 2 cups of the pasta water to add back in later. Turn off the heat on the same large bowl your pasta cooked in. Then add in your bacon, eggs, and cheese mixture and stir. As you stir slowly add in your pasta water a 1/4 cup at a time until it becomes creamy then hit it with some fresh cracked black pepper and salt to taste.
Plate up your carbonara and top with some fresh shredded parmesan and enjoy!


Tesla tonic:
1.5 ounces Empress gin
1 ounce of lemon juice
4 ounces tonic water
1 ounce creme de violet

Pour the Empress Gin into a collins glass.
Add ice and your lemon juice to one half of your shaker. Then pour your gin from your collins glass into your shaker tin. Then carefully pour back into your collins glass to see the color change! Top with tonic and slowly pour your creme de violet in to watch the color change again! Garnish with a lemon wheel and enjoy!
