The best way I have found to hide barrels is to find two trees very close to one another and drop it in between the two. Ideally a green or blue barrel.

The first pair of trees are close enough to hide barrels especially if they're within a larger forest.

The second pair of trees in the video are so close that they look like only one tree. Better to hide your barrel stash.
