This week I'm cooking Fergus Henderson's fantastic dish and that is roasted bone marrow, so easy and simple and something to really tantalise your taste buds. Roast the marrow bones off, make a simple parsley salad and serve with lashings of sourdough, what a treat.
Ingredients-
➤ A few bone marrow bones
➤ A small handful of parsley, shallot, capers, roughly chopped
➤ A good squeeze of lemon juice and a good glug of olive oil
➤ Some slices of sourdough bread
Recipe-
Season both ends of the marrow bones and start of cooking in a pan then move to a hot oven for around 20 minutes, keep an eye on it so the marrow doesn't completely cook out.
Add the chopped shallot, capers and parsley to a bowl and season. Add the lemon juice and olive oil and mix. Toast the bread.
To serve, scoop some of the bone marrow out onto the toast, then add the salad. Enjoy!
