To Make Masala Noodles
Ramen Noodles - 4 Packets
Oil - 2 Tbsp
Garlic - 2 Tsp
Ginger - 1 Tsp
Onion - 1/2 No.
Carrot - 1/2 Cup
Cabbage - 1/2 Cup
Red Capsicum - 1/4 Cup
Green Capsicum - 1/4 Cup
Salt - 2 Tsp
Pepper - 1 Tsp
Cumin Powder - 1/2 Tsp
Kashmiri Chilli Powder - 2 Tsp
Chaat Masala -2 Tsp
Sugar - 1 Tsp
Soy Sauce - 2 Tsp
Spring Onion Greens
Spring Onion Whites
Method:
1. Boil water in a pot and add salt to it.
2. Add in the noodles and cook them for 2 mins.
3. For the noodles to be dry and not sticky, add oil and mix.
4. After they are done, strain the noodles and wash with cold water to prevent them from cooking further with the leftover heat.
5. Take a wide kadai and add oil.
6. Drop in chopped garlic, ginger and onions. Saute for 2 mins/
7. Now add juliennes of carrots, cabbage, green capsicum and saute them on a high flame for 3 mins.
8. Reduce the flame to a medium low and add salt, pepper powder, red chilli powder, cumin powder, chaat masala powder, sugar and soya sauce.
9. Mix them all well and add in spring onion greens along with spring onion whites.
10. Add in the cooked noodles and gently mix everything well.
11. Cook for a few mins and finally garnish with the chopped greens.
12. Street style masala noodles in ready to be served hot and nice with tomato ketchup by the side.
