Here I am setting up the Saeco Xelsis SM7683/10 fully automatic espresso machine. I followed the so many different guidelines to setup the waterfilter and test water hardness, but it was confusing, and I initially tested the water hardness of water that came out of the machine (filtered), not the water that was coming in the machine. Here are my first impressions. I used Lavazza Crema & Aroma espresso beans. I think the roast of this coffee is too black/dark and strong taste. The first espresso that came out did not taste good. But I read somewhere that it can take around 4 coffees for the espresso machine to adjust itself. I also think that the coffee is coming out too fast (talking about a weak extraction), so I adjusted the grinder setting to 3, and next I chose a ristretto and that was already much better in consistency, crema and taste. Would love to hear from other Saeco Xelsis owners what they think of this automated espresso machine. I am coming from a grinder, portafilter and great espresso machine with perfect espresso coming out. (18grams grinds, 30 seconds extraction) I am hoping that I can get the same out of this machine.
