Today we're going grocery shopping and I'll show you how I like to eat fresh New Zealand produce. It's spring so there are still kiwifruit but tomatoes, strawberries and avocados have just come in season.

🍫 My favourite bars are Nelson Pear + Manuka Honey, Marlborough Sea Salt + Caramel Brittle, Berry & Biscuit and Honey Almond Nougat
🍪 Mallowpuffs and Hokey Pokey Squiggles were in the video but my favourite biscuits are chocolate fingers (please ignore the name, they are so good haha)

🍰 Mini Honey Pavlova Recipe (makes 6 meringues or 3 stacked towers)

Ingredients:
80ml egg whites (about 2-3)
120g caster sugar
1 1/4 tsp cornflour
1/2 tsp white vinegar
200ml heavy whipping cream
1/2 teaspoon manuka honey
Strawberries + blueberries (or any fresh fruit!)

- Preheat oven to 150C
- In a stand/hand mixer, whisk egg whites on high for 1 minute. Add sugar, one spoonful at a time.
- Beat until peaks form (about 8 - 9 mins) and sugar is dissolved.
- Add cornflour and vinegar and whisk for 30 secs.
- Line tray with baking paper (optional: use the base of a glass to draw 9cm circles as a guide, flip paper over)
- Scoop mixture onto the tray (approx. 8cm wide and 4cm tall)
- Turn oven down to 110C, bake for 1 hour 30 mins
- Turn off oven and keep door closed. Leave meringues to cool in oven for 3-4 hours or overnight (please don't open the oven door because the meringues will collapse)

- Whip cream with honey on high until soft peaks form.
- Assemble meringues, whipped cream and fresh fruit. Add a drizzle of honey if you'd like :)
Enjoy!
p.s. Pavlova is best eaten fresh! You can make the meringues ahead of time and then assemble just before you want to eat them (or they'll go soggy)
