A step by step guide on how to make zopf
Ingredients:
1 kg flour
2 teaspoons salt
1 dl milk
2 teaspoons sugar
21 g yeast
4 ounces butter (1 stick)
6 dl milk
1 egg yolk
1 drop half-and-half or heavy creme
1. Put 1 kg of flour into a bowl
2. Mix 2 teaspoons of salt with flour
3. Make indentation into flour
4. Pour 1 dl milk into a cup
5. Add 2 teaspoons of sugar to milk
6. Heat milk to lukewarm
7. Add 21 g yeast to milk and stir
8. Pour yeast into indentation in flour
9. Let yeast sit for 10 min.
10. Cut 4 ounces of butter
11. Put pieces in pan; heat
12. Add 6 dl milk to melted butter; make sure melted butter is lukewarm
13. Put bowl in mixer; turn mixer on low
14. Add melted butter to dough while mixing
15. Let mix for 10 min
16. Loosen dough; put wet cloth over and let sit for 1 hr.
17. Pre-heat oven to 425(F)
18. Separate dough into pieces
19. Roll pieces
20. Fold dough
*start by putting one roll vertically and one on top of it horizontally
*fold top part down to bottom (left)
*fold bottom part to top (right)
*fold left part to right (top)
*fold right part to left (bottom)
*repeat- at end, join parts together
21. Separate an egg yolk from the egg white
22. Break the yolk and add a drop of half and half or heavy cream (optional)
23. Use food brush to spread yolk on dough- avoid crevices
24. Put dough into oven with small bowl of water
25. After 10 min., set temperature of oven down to 395(F) for 20 min.
26. Take out of oven-done.
