A special dish from raw banana, which has both sweet and spicy tastes and it is perfectly crispy. This is an Onam special of Kerala state. It requires much patience because time consuming process. Cut the raw banana into uniform pieces, fry them in low flame( requires around half an hour) add those pieces in jaggery syrup. Banana breeds suitable for this dish are mainly "Nendra" and "Boodi." It can be stored nearly 20 days, if stored well.Spice used for this dish is pepper and dry ginger.
Ingredients:
Raw banana 2kg [ "Nendra" breed used ]
Jaggery 600grms
Ginger powder 5sp
Pepper powder 5sp
Oil for deep fry
Stone Sugar powder (Rock candy powder).
