ΨΑΡΟΣΟΥΠΑ - Fish Soup
2 kilograms of fatty fish, whichever you can find at your fishmonger’s
3 litres of water
5 potatoes
5 zucchinis
5 carrots
5 stalks of celery
2 large onions
Juice of two lemons
100ml of olive oil
Salt and pepper to taste
METHOD
1. Boil the fish in water with a pinch of salt for 15 to 20 minutes.
2. Remove the fish from the water and clean them, removing the bones.
3. Drain the water to remove any bones.
4. Add the vegetables to the boiling water and cook for about 20 minutes, adding salt, pepper, olive oil, and lemon juice.
5. Once the vegetables are cooked, remove half of them along with half of the broth and blend them in a blender until smooth.
6. Serve by adding broth, pieces of vegetables, and pieces of fish. Drizzle with fresh olive oil, a little pepper, a squeeze of lemon, and enjoy your meal.
