Turkey Demi Glace - Best Turkey Gravy Recipe Ever

Ingredients:
Bones, neck, giblets from one turkey
2 carrots
4-5 small onions, or 2 big onions, or 1 gigantic onion
3-4 ribs celery
2-3 small tomatoes, crushed
45 mL (3 Tbsp) oil
Enough water to cover
Salt to taste
30 mL white wine or vinegar

Method:
Preheat oven to 475ºF.
Chop up the vegetables fairly fine; include the onion and carrot peels.
Break up the turkey bones into smallish bits to increase the surface area for browning.
Place the vegetables and turkey bones in a large roasting pan, drizzle in the oil and then mix to coat.
Roast in the oven for a half hour then stir; continue to roast giving a stir every 15 minutes until everything is a deep roasted brown.
Transfer everything to a large stockpot, add just enough water to cover the bones; and bring to a simmer.
Meanwhile deglaze the roast pan over high heat with a couple cups of water; transfer this liquid to the stockpot as well.
Simmer for two hours, uncovered.
Strain the liquid from the stockpot into a saucepan.
(You can at this point do a second extraction from the bones, a ‘remouillage’, by covering with water and simmering again.)
Bring the stock in the saucepan to a simmer, and simmer until it is reduced to 1 cup of liquid.
When fully reduced adjust with salt and a splash of vinegar or white wine to taste.
